Freeze the batter? I dunno.   My limited cullanary skills has proven that cold batter doesn't work as well?  I was told to put sticks in the candy, chill. dip in the batter and fry till golden brown.)

I agree with you on this,  I don't think a homemade batter would freeze well, and will probably fall apart as soon as you put in the deep fryer.  The fairs are probably factory made with preservatives and other nasties that they can freeze it.

I would however make sure the twinkies are good and chilled, maybe even throwing them in the freezer for 15 minutes,  not frozen solid  but good and cold.  I tried them at room temperature and the twinkies got greasey and the filling all melted.   :'(  but I didn't have a recipe i winged it after seeing it on the food channel.

I fry with Peanut oil. It's about  $6 a gal. (Vegitable oil is about $1.50 a gal).   Peanut oil is much better, and IMHO, worth it.

You'll need 5 gallons to do a decent sized  bird.

I don't know why you'd want to do 2 birds? I can get a 20lb + turkey easily into my fryer. That's more than enough for our dinner.

And yes, it is everything you've heard. It tastes amazing,  I inject marinades into the turkey and it's great.  Cajun is ny favorite.  Mesquite is also a nice flavor.

It can make a mess (oil bubbles over, 5 gallons of oil to deal with, large pots to clean, but it's worht it. ) I'll fry up a turkey about 2-3 times a year.

That is a crusty lookin' little pink bird in da pot, without a doubt.

drewstar, I promise you, the carnie folk had the battered and skewered Twinkie in the freezer.  When I order it, they pull it out, take the Saran wrap off, and drop it in the oil.  5 minutes later, it's like an orgasm on a paper plate!

I rubbed my turkey last night.....kinda like chokin' the chicken only more fowl..... ;D.....used a great cajun rub and then injected it with Cajun Butter Marinade and it's now soakin in its own li'l tub'o'sauce.  Planning on putting it on the rotisserie tomorrow and watching it as I drain and refill my tub.  I love fried turkey and I'm anticipating this rotisserie turkey to be exceptional as well.......

HEY BILL.....get this back to the main board......I'm talkin' water change here........ ;D

We ended up not frying the twinkies.  We figured that between the turkey, the french fries, and the snickers bars being fried, our artieries couldn't handle any more.  ::)

But to end the freeze the candy withthe batter or not debate, Terminator, I forze the candy bars, and right before frying, we dipped the candy into the batter (room temperature) and they came out awesome.

It was kinda like a red neck foundue. Everyone sitting outside in  freezing cold, sticking these long sticks into the hot oil, frying up candy bars.

Deep frying makes anything taste good.
You could probably make a shoe taste good if you deep fried it!

I heard of the deep fried oreo's and came across them while searching for tips on the net.  At first I was skeptical, but many folks claim they're great.  It's my understanding the cookie gets soft and warm, kind of like a hot, fudgey brownie.

The snikers were a big hit, although very filling. 1/2 a candy bar was more than enough.  We'll do this again, and maybe try the twinkies and oreos.

Oreos and Snickers are hillbilly fare.  Bananas Foster, Creme Brule', Baked Alaska, all second rate pretenders to the throne.  The Fried Twinkie is KING of DESSERTS.  There can be only one.....
