I have a newer Sundance Maxxus 880 and the cover has become water-logged and heavy to lift. I see that there are numerous places on the Internet to buy a replacement cover. What are the most reputable vendors, and is there something I should get this time to prevent the water logged cover replacement every 3 years?

Welcome to the forum. Most people will say they get at least 5 years from a cover. The common thought is closing the cover too soon after adding chlorine destroys the cover quicker. On my first tub, I bought a replacement cover from RHtubs, that was an easy process and it was a good cover that fit well. I only kept that tub another 2 years so I can't say how long it lasted.

I always had great luck with Sunstar, but not sure they sell online. Also, make sure to check how the cover folds. I know the Maxxus cover can be either a 2 piece or 3 piece cover depending on the manufacturer.

If you're in Canada, this company makes one of the better covers: http://www.hottubcoverscanada.ca/ .
In the USA, try:

Wherever you end up buying, get the double vapor barrier option. It can effectively double the life of your cover since vapor barrier failure, and thus waterlogged foam is the most common reason for replacement.
Buying from a brick and mortar dealer is nice in case there is a problem. If you can find a local dealer with a competitive price, that's the way to go. If you go with a low priced online one, make sure they use 30oz vinyl, 4 to 6 mil heat sealed vapor barrier, at least 1.5# foam, etc.
