I have a used Arctic Spa with Peak Ozone in it.  What kind of chemical regime should I go with?

Personal preference, but the easiest would probably be to use granular chlorine( sodium dichlor). May need to add some every couple of days. But it doesn't cost too much and it very easy to use. If you don't like Chlorine, you could go with a bromine tablet with floater and some MPS shock. That is easy too. You may go talk to your dealer about that and they will get you headed in the right direction.
